Bellbird Spring Aeris is produced by the Waghorn family in North Canterbury, who established their organically farmed estate in 2005 with a strong focus on soil health and biodiversity. This skin-contact white is crafted from Sauvignon Blanc and Riesling, wild-fermented on skins for around two weeks before pressing, then matured in neutral oak and bottled unfined and unfiltered. The result is a vivid, amber-hued wine with pithy citrus, dried herbs, and a tea-like tannic grip - energetic, savoury, and built for food.
