This tiny plot is dry-farmed and tended by hand, ensuring healthy, concentrated fruit that captures the essence of its unique microclimate. After wild fermentation in stainless steel, the wine is matured for a full 20 months in two 500L and one 300L French oak barrels, a regime that allows slow development and nuanced integration of spice, structure and fruit.
