Description
Founded in 1860 and now part of the Bollinger group, Champagne Ayala is based in Ay in the Montagne de Reims and is celebrated for a style defined by finesse, purity and low dosage. The Ayala Brut Rose Majeur NV (Gift Box) is a non vintage rose Champagne composed of approximately 50 percent Chardonnay, 40 percent Pinot Noir, and 10 percent Meunier, including around 6 percent of still red wine from Pinot Noir grown in Ay. All base wines are vinified separately in stainless steel to preserve fruit clarity, then aged on lees for an average of three years before disgorgement with a dosage of about 7 grams per litre and bottled at 12 percent alcohol. In the glass it shows a delicate, pale pink colour with fine, persistent bubbles. The bouquet is expressive, combining aromas of wild strawberry, raspberry, redcurrant and vine peach with hints of citrus blossom, brioche and spice. The palate is dry, refined and vibrant, offering pure red fruit and citrus flavours supported by bright acidity and a silky texture. The finish is long, fresh and precise, marked by gentle mineral tension. Serve at 8 to 10 degrees Celsius; ideal as an aperitif or with salmon, shellfish, duck or red fruit desserts, and suitable for cellaring for several years.
