      Founded in 1829 and still family owned, Champagne Bollinger is based in Ay in the Montagne de Reims and is renowned for a Pinot Noir led style built on barrel fermentation, extended lees ageing and the use of estate grown fruit from Grand and Premier Cru sites. The Bollinger La Cote aux Enfants 2013 is a Blanc de Noirs made entirely from Pinot Noir sourced from the steep four hectare Grand Cru vineyard of La Cote aux Enfants in Ay. The 2013 growing season was cool and late, resulting in grapes of high acidity and firm structure. Fermentation took place entirely in small, neutral oak barrels with full malolactic conversion, followed by more than eight years of ageing under natural cork. Disgorgement occurred in March 2022 with a dosage of approximately 4 grams per litre and an alcohol level of 12 percent. In appearance it shows a pale copper tinged hue with very fine, persistent bubbles. The aroma is complex and restrained, revealing redcurrant, wild strawberry, blood orange, citrus peel, dried flowers, toasted almond and light spice. The palate is dry, concentrated and precise, combining red fruit intensity with chalky mineral grip and firm acidity. The finish is long, savoury and saline. Serve at 8 to 10 degrees Celsius; suitable for cellaring for up to twenty years.
