Description
Founded in 1829 and still family owned, Champagne Bollinger is based in Ay in the Montagne de Reims and has built a reputation for rich, structured wines driven by Pinot Noir and extended lees ageing. The Bollinger Rose NV (Gift Box) is a non vintage blend of 62 percent Pinot Noir, 24 percent Chardonnay and 14 percent Meunier, with around 5 to 6 percent of still red wine from Ay and Verzenay added for colour and texture. Over 85 percent of the fruit comes from Grand and Premier Cru vineyards. Fermentation takes place partly in small oak barrels, with reserve wines from magnums included for depth and consistency. The cuvee is aged on lees for approximately 30 to 36 months before disgorgement and finished with a dosage of about 7 to 8 grams per litre. It has 12 percent alcohol and is closed with natural cork. The wine shows a pale salmon hue with fine, persistent bubbles. Aromas include strawberry, redcurrant, cherry, brioche and spice. The palate is dry, medium bodied and finely structured, with crisp acidity, supple texture and a mineral edge leading to a long, savoury finish. Serve at 8 to 10 degrees Celsius; suitable for cellaring up to eight years and ideal with shellfish or charcuterie.
