Description
Founded in 1829 and still owned by the founding family, Champagne Bollinger is based in Ay in the Montagne de Reims and is internationally regarded for its Pinot Noir driven style, use of oak barrel fermentation and prolonged lees ageing that emphasise structure, depth and complexity. The Bollinger Vieilles Vignes Francaises Recolte 2012 is a Blanc de Noirs made exclusively from ungrafted Pinot Noir vines planted en foule within two walled Grand Cru parcels, Clos Saint Jacques and Chaudes Terres in Ay. These surviving pre phylloxera plots yield minute quantities of intensely flavoured fruit; only 2193 bottles were produced. The 2012 vintage was marked by low yields and high quality, producing fruit of exceptional ripeness balanced by firm acidity. Fermentation occurred entirely in aged oak barrels, followed by over eight years of ageing under natural cork. Disgorged in March 2023 with a dosage of 6 grams per litre at 12.5 percent alcohol, the wine appears deep gold with fine, persistent mousse. Aromas reveal redcurrant, raspberry, wild strawberry, Mirabelle plum, candied citrus, quince, roasted hazelnut, honey and subtle spice. The palate is dry, full bodied and intensely layered, combining red and stone fruit precision with notes of baked apple, brioche and chalky minerality. The texture is broad yet tense, sustained by bright acidity and a long, saline, savoury finish. Serve at 10 to 12 degrees Celsius; outstanding with lobster, pigeon, veal sweetbread or white truffle dishes, and capable of cellaring for 20 to 30 years.
