This vintage Blanc de Blancs highlights the chalky elegance of Champagne Jacquart's Grand Cru Chardonnay vineyards in the Côte des Blancs. The 2016 growing season experienced a warm summer and timely harvest, yielding fruit with both ripeness and vibrant acidity. Grapes were hand harvested from villages such as Avize, Le Mesnil‑sur‑Oger and Cramant and pressed in whole clusters. The juice fermented at low temperature in stainless steel and underwent full malolactic conversion to round the edges. The base wine was bottled and aged on lees for five years before disgorgement with a restrained dosage. Presented at 12% alcohol, the wine displays bright lemon‑gold colour and a stream of fine bubbles. Aromas of lemon curd, green apple, chalk and freshly baked brioche are echoed on the palate, which is creamy yet linear with high acidity and a long, mineral finish. This Blanc de Blancs pairs well with oysters or grilled fish and promises to age beautifully over the next decade.
