The Mosaïque Signature is an elevated interpretation of Champagne Jacquart's house style, drawing on a careful selection of base wines and an extended lees maturation. The blend, dominated by Chardonnay with Pinot Noir and Meunier in supporting roles, originates from Premier and Grand Cru vineyards across the maison's extensive network. Each parcel is fermented separately in stainless steel with malolactic conversion encouraged for harmony. Reserve wines from older vintages contribute depth, and once assembled the cuvée undergoes secondary fermentation and rests sur latte for four to five years, longer than the standard Brut. Disgorged with a modest Brut dosage and bottled at 12% alcohol, the Signature presents a pale straw hue and fine mousse. Aromas of ripe stone fruit, citrus zest, almond and brioche lead into a palate that is creamy yet focused, supported by vibrant acidity and a lingering mineral note. This Champagne is ideal with poultry or firm fish and will continue to improve for several years.
