Champagne Jacquart's Mosaïque Signature Rosé offers an elegant expression of pink Champagne crafted from Chardonnay and Pinot Noir with a small addition of still red Pinot for colour and flavour. Grapes are harvested from Premier and Grand Cru sites across the maison's grower network. Following gentle pressing, the white and red base wines are fermented separately in stainless steel; malolactic conversion is conducted to soften the acids. Reserve wines enhance the blend's complexity and continuity. After assemblage, the rosé undergoes secondary fermentation in bottle and remains sur lie for at least three years prior to disgorgement with a modest Brut dosage. With 12% alcohol, the wine reveals a delicate salmon hue and fine, persistent bead. Aromas of strawberry, raspberry, blood orange and pastry lead into a palate that is dry and refined, with creamy mousse, fresh acidity and a lingering, chalky finish. This rosé pairs beautifully with seafood, charcuterie or berry desserts and will age gracefully for several years.
