Established in 1812, Laurent-Perrier bottles its vintage Champagne only in years that meet the house's Chardonnay-leaning brief. Brut Millesime 2015 draws on select Chardonnay and Pinot Noir parcels, favouring the pure cuvee from the first pressing. Base wines were fermented cool in stainless steel to retain definition; malolactic is only partial to keep tension, and the assemblage matured for an extended period on lees before a measured dosage. The approach aims to capture the ripeness and structure of 2015 without excess weight. In the glass the wine shows a fine, persistent bead, ripe citrus and stone-fruit notes with pastry accents, all bound by a chalky line.
