The 2020 cuvee was fully destemmed, then fermented in stainless steel to protect bright red fruit while allowing a measured, moderate extraction. Maturation followed in a mix of tank and barrels to keep the focus on purity with gentle spice rather than overt oak, aligning with Bichot’s restrained approach.
