Founded in 1831 in Beaune, Maison Albert Bichot selects parcels in Gevrey-Chambertin to capture depth and clear village typicity. The 2018 season was warm, and the cuvee was handled with a measured touch: the fruit was fully destemmed, given a cool maceration and fermented in tank to preserve definition, then matured in French oak, a proportion new, to shape structure and discreet spice without overwhelming the fruit. The intent is balance and transparency, allowing terroir and the generosity of the year to show cleanly. In the glass the wine layers dark cherry and blackcurrant with earth and cedar notes, the palate medium to full in weight with muscular but ripe tannins held in check by fresh acidity. Oak sits in the background as support; the line is firm, the texture assured, and the close savoury and stony rather than sweet. Well suited to decanting, it partners confidently with roast poultry, pork or mushroom dishes where substance and savour are welcome.
