Description
Founded in 1831 in Beaune, Maison Albert Bichot works closely with growers across the Cote Chalonnaise to capture Mercurey's fuller bodied Pinot style from limestone and clay slopes. After a warm, ripe season, the 2019 musts were fermented in tank with cap management tuned for structure rather than weight, then matured partially in barrels and partly in tank to bring polish while keeping fruit purity to the fore. In the glass the wine is dark fruited yet poised, opening on black cherry and violet with gentle spice. The palate is medium to fuller in weight with a firm but refined tannic frame and fresh acidity guiding length; oak sits in the background as support rather than statement, and a savoury, stony note shapes the close. It is a reliable partner for roast poultry, pork or mushrooms, and has the balance to improve over a few years in bottle. Serve at a cool cellar temperature to emphasise clarity and the village's typical combination of generosity and seriousness.
