      Founded in 1831 in Beaune, Maison Albert Bichot brings long experience in Chablis to this Petit Chablis drawn from higher, wind exposed sites on Portlandian limestone around the town. The goal is clarity and refreshment: the 2023 was fermented at cool temperatures in stainless steel to lock in citrus drive and a lightly saline edge, then held briefly on fine lees to round contours while keeping the wine firmly unoaked. With no oak influence, variety and soils speak cleanly in the glass. The palate opens on lemon and green apple with a distinct wet stone note, the bead of acidity taut and linear and the texture brisk rather than weighty. The finish is bright and dry with a mineral snap that invites another sip. Versatile at the table, it is an archetypal Petit Chablis for oysters, prawns and simple salads, and works well as an aperitif where precision and lift are preferred, reflecting Bichot's careful grower partnerships and restrained, protective handling.
