      Sato Wines, founded by Yoshiaki and Kyoko Sato, is a Central Otago estate known for its organic farming and minimal-intervention winemaking. The Schisteux series focuses on varietals that combine texture, depth and site expression.

      In 2022, Chenin Blanc was hand-picked, gently crushed underfoot and basket pressed. Fermentation occurred spontaneously in French oak barrels, with nearly a quarter of the barrels new. The wine was then matured for 15 months, developing weight and complexity while retaining freshness.

      The finished wine is layered and textural, with golden apple, quince and subtle spice from oak integration. Refreshing acidity and saline minerality provide balance and length, giving this Chenin Blanc both presence and precision.
