Description
Greystone draws its name from the unique limestone conglomerate that we find as the bedrock on which our vine roots grow in. A limestone mix of fossils, sea shells and small pebbles that have been fused together through the seismic movement of North Canterbury. Over time this ancient seabed has been pushed and folded upward.
Erin’s Chardonnay grows on our steepest and highest slopes, in limestone soils which impart a beautiful minerality and tension to the wine. The block is 100% Mendoza clone, which responds well to this terroir. 2020 started with some difficult cool weather leading to small fruit set. Lovely hot summer gave us pristine clean bunches of fruit. Extensive leaf plucking and bunch thinning ensured balanced happy vines. Fantastic Autumn saw us achieve perfect ripeness whilst able to preserve fruit flavours and acidity. Truly fantastic vintage for growing Chardonnay.
We handpicked our steepest block of Mendoza Chardonnay before a gentle whole-bunch pressing to tank without additions. We allowed the juice to settle overnight before we racked to French oak barrels for wild fermentation and full malolactic fermentation. The extended nature of fermentation brings not only richness to the wine but also layers and subtle complexity.
