      Sato Wines, founded by Yoshiaki and Kyoko Sato, is a Central Otago producer known for organic farming and minimal-intervention winemaking. The Le Chant du Vent series highlights purity of fruit and the character of Sato’s Mount Pisa vineyard.

      In 2022, Chardonnay from the Mount Pisa site was hand-picked and basket pressed. Fermentation occurred spontaneously in French oak barrels, with the wine maturing for sixteen months, including 18% new oak. Minimal sulphur was used throughout, preserving the integrity of fruit expression.

      The finished wine is elegant and finely textured, showing ripe nectarine and citrus alongside subtle toast and spice. Bright acidity and a clean, refreshing finish underline the precision of this cool-climate Chardonnay.
