Gonzalez Byass Apostoles Palo Cortado VORS is one of the most distinguished sherries from Jerez, crafted from a blend of 87% Palomino Fino and 13% Pedro Ximenez grown on the region's chalk-rich albariza soils. The wine begins ageing biologically under flor before being fortified to around 20% ABV and matured oxidatively for more than 30 years in seasoned American oak casks within the traditional solera and criadera system. Certified VORS (Vinum Optimum Rare Signatum), this extended ageing produces a sherry of remarkable depth, complexity and harmony. Deep mahogany in colour, Apostoles opens with layered aromas of roasted walnut, dried fig, caramelised orange peel, polished wood, cocoa and sweet spice. The palate is rich yet impeccably balanced, offering flavours of toffee, raisin, candied citrus, tobacco and nutmeg framed by vibrant acidity and a long, persistent finish that marries dry nuttiness with subtle sweetness from the Pedro Ximenez. Served lightly chilled at 12-14°C, it is superb with mature cheeses, roast game, foie gras or nut-based desserts and will continue to evolve gracefully over time.
