Gonzalez Byass Elegante Fino Dry is a classic example of biologically aged fino sherry from Jerez, produced from 100% Palomino Fino grown on the region's chalk-rich albariza soils. After fermentation, the base wine is fortified to 15% ABV and aged under a protective layer of flor yeast for an average of three years in seasoned American oak casks using the traditional solera and criadera system. This ageing method preserves freshness and builds the wine's hallmark saline, nutty complexity. Pale straw in colour, it opens with aromas of fresh almond, green apple, chamomile and citrus peel, lifted by a subtle sea-breeze note. The palate is bone-dry, crisp and finely textured, showing bright acidity, delicate almond bitterness and a clean, savoury finish with a hint of chalky minerality. Best served chilled at 6–8°C, Elegante is a natural partner for tapas, olives, salted almonds, grilled seafood or sushi, and is best enjoyed within 12 months of bottling to capture its vibrant freshness.
