The goal is clarity and refreshment: the 2023 was fermented at cool temperatures in stainless steel to lock in citrus drive and a lightly saline edge, then held briefly on fine lees to round contours while keeping the wine firmly unoaked. With no oak influence, variety and soils speak cleanly in the glass. The palate opens on lemon and green apple with a distinct wet stone note, the bead of acidity taut and linear and the texture brisk rather than weighty.
