      Founded in 1831 in Beaune, Albert Bichot works with long term growers to shape a measured, site first take on Meursault from the village's classic pebbly, marl rich slopes. The 2023 was fermented at cool temperatures, divided between tank and barrel, then held on fine lees to build mid palate texture while keeping the line taut. Oak is restrained and used to frame, not dominate, so fruit and structure remain central and the profile stays clear. In the glass it is fragrant with citrus, pear and lightly toasted hazelnut. The palate is mid weight, spreading with Meursault's hallmark breadth yet guided by clean acidity and a persistent stony thread. The finish is dry, precise and long rather than showy. This is a table minded expression that reflects Bichot's preference for clarity and balance, with judicious oak and an emphasis on texture and length over opulence. Serve cool with roast poultry or firm white fish to underline focus and refreshment.
