"Canon initially appears discreet. It is somewhat reductive, but gradually reveals itself, revealing nuances of eucalyptus, herbs, peonies, and pepper. The wine is dense in the opening and exhibits a straightforward and fresh character. Its compact tannins are highly defined. They even have a meaty note and offer valuable support, as does the acidity, which is both structuring and refreshing. The finish is salty, juicy, and lingering.
