Gonzalez Byass Alfonso Oloroso Dry is a benchmark example of oxidative sherry from Jerez, produced entirely from Palomino Fino grapes grown on the region’s chalk-rich albariza soils. After fermentation, the base wine is fortified to 18% ABV, halting flor formation and enabling oxidative maturation. The wine spends an average of eight years ageing in seasoned American oak casks within the traditional solera and criadera system, a process that builds complexity, depth and aromatic intensity. Deep amber in colour, Alfonso opens with evocative aromas of roasted walnut, polished wood, orange peel, leather and warm spice. The palate is dry, full-bodied and richly textured, offering flavours of toasted nuts, caramelised fig, dried citrus peel and savoury spice framed by vibrant acidity and a long, nutty finish. Best served lightly chilled at 12–14°C, it pairs beautifully with aged Manchego, game dishes, mushroom-based stews and Iberian charcuterie, delivering a classic expression of Jerez’s oxidative sherry style.
