Description
Gonzalez Byass Leonor Palo Cortado is a classic example of one of Jerez's rarest and most complex sherry styles, produced from 100% Palomino Fino grown on the region's chalky albariza soils. The wine begins its life ageing biologically under flor before being fortified to 18% ABV and undergoing extended oxidative maturation, resulting in the unique balance of finesse and depth that defines Palo Cortado. Leonor spends an average of 12 years maturing in seasoned American oak casks within the traditional solera and criadera system, developing remarkable aromatic complexity and structure. Deep amber-mahogany in colour, it opens with aromas of toasted almond, orange peel, vanilla, polished wood and subtle leather. The palate is dry, full-bodied and silky, delivering flavours of roasted nuts, dried fig, caramelised citrus and savoury spice framed by vibrant acidity and a long, nutty finish. Served lightly chilled at 12–14°C, Leonor pairs beautifully with Iberian charcuterie, hard cheeses, game dishes or richly flavoured seafood stews.
