      Gonzalez Byass Solera 1847 Dulce is a rich and expressive sweet Oloroso sherry from Jerez, crafted from a blend of around 75% Palomino Fino and 25% Pedro Ximenez grown on the region’s chalky albariza soils. Following fermentation, the base wine is fortified and aged oxidatively in seasoned American oak casks for around eight years using the traditional solera and criadera system. The addition of naturally sweet Pedro Ximenez enriches the wine’s depth and complexity, producing a style that is generous yet finely balanced. Deep mahogany in colour, it offers intense aromas of dried fig, date, toffee, walnut and warm spice. The palate is lusciously sweet but beautifully structured, with layers of raisin, candied orange peel, molasses and roasted nuts lifted by a thread of acidity that keeps the finish fresh and persistent. Bottled at 18% ABV, Solera 1847 is a classic choice with blue cheese, nut-based desserts, chocolate or rich fruitcake, and can also be enjoyed slightly chilled as a contemplative digestif.
