      The Greywacke Pinot Gris 2024 is an expressive and richly textured Marlborough white, crafted in an off-dry style that balances opulence with precision. Fruit from select vineyard parcels was hand-harvested, whole-bunch pressed and cold settled before fermentation. A portion was fermented with indigenous yeasts in old French oak barriques to enhance texture and depth, while the remainder was fermented in stainless steel to retain freshness and purity. After blending, the wine spent six months on lees, building weight and complexity without overt oak character. Bottled at 14.1% ABV with 9.2 g/L residual sugar, a pH of 3.33 and total acidity of 5.4 g/L, it offers a layered bouquet of golden pear, poached nectarine, fig, dried apricot, chamomile and soft lanolin. The palate is succulent and textural, showing ripe stone fruit richness supported by a fine mineral seam and balanced acidity, leading to a long, gently off-dry finish. Generous yet finely poised, this Pinot Gris pairs beautifully with roast pork, creamy shellfish dishes or lightly spiced cuisine.
