      The Palliser Riesling 2024 is a precise and vibrant expression of Martinborough terroir, crafted to highlight purity of fruit, minerality and taut acidity in a bone-dry style. Fruit from estate vineyards was hand-harvested and cool-fermented in stainless steel to capture aromatic intensity and textural clarity, then bottled young to preserve its freshness and energy. The wine opens with lifted aromas of lemon zest, lime blossom and Granny Smith apple, layered with white peach, mandarin peel and subtle white spice. A distinctive stony mineral character and floral lift add complexity. On the palate it is crisp and linear, driven by a racy acid backbone that balances concentrated citrus and orchard fruit flavours. A saline edge and subtle phenolic grip contribute to texture and length, leading to a long, precise finish. Bone dry and highly expressive, this Riesling will shine as an aperitif or alongside oysters, sashimi and lightly spiced Asian cuisine, and will continue to evolve beautifully through 2034.
