Fermentation proceeds slowly in stainless steel, using wild yeasts to amplify textural nuance and site expression, with no oak or malolactic intervention. The resulting wine is pale, bright and bone-dry, with pronounced aromas of white peach, lime zest, sea spray and fresh herbs.
