Fermentation takes place exclusively in stainless steel at low temperatures, safeguarding the variety's floral and mineral character; no oak is used, though a short period of lees contact adds subtle creaminess. An off-dry style, this Chenin shows a vibrant aromatic profile of green apple, quince, acacia flower and a hint of honeyed wax. The palate is bright and textural, balancing gentle sweetness with racy acidity and a stony, mouth-watering finish.
