      The Palliser Pencarrow Sauvignon Blanc 2024 is a vibrant and varietally pure expression of Martinborough, crafted to highlight freshness, clarity and precision. Fruit from estate vineyards was harvested at optimal ripeness and cool-fermented in stainless steel to preserve aromatic lift and crisp acidity. Bottled at 12.7% ABV, the wine opens with bright aromas of passionfruit, grapefruit and lime zest, layered with hints of ripe apple, tropical fruit and a subtle wet stone minerality. A delicate thread of white spice adds complexity. The palate is crisp and refreshing, delivering concentrated citrus and white-fleshed fruit flavours supported by lively acidity and a whisper of saline minerality that drives length and balance. Dry, energetic and immediately appealing, this Sauvignon Blanc is an excellent aperitif style and pairs beautifully with shellfish, goat’s cheese or fresh salads. Best enjoyed in its vibrant youth but will hold well over the next two to three years.
