      The Palliser Sauvignon Blanc 2024 is a benchmark expression of Martinborough’s cool-climate terroir, crafted to showcase purity, tension and varietal definition. Hand-harvested fruit from estate vineyards was gently pressed and fermented at cool temperatures to preserve aromatic intensity, with a short period on lees adding subtle texture and palate weight. Bottled at around 13.5% ABV, the wine opens with lifted aromas of passionfruit, lime zest, citrus blossom and fresh gooseberry, supported by hints of soft green herbs and a fine mineral thread. The palate is crisp and finely structured, balancing concentrated white-fleshed fruit and citrus flavours with vibrant acidity and a satin-like texture. Dry and refreshing yet layered and complex, this is a precise and energetic Sauvignon Blanc that reflects Palliser’s restrained house style. Delicious on release, it will drink well over the next 3 to 5 years and pairs beautifully with fresh seafood, goat’s cheese salad or lightly spiced Asian dishes.
