Vineyard Cultivation

The Doctors' range is Forrest Wines' lower-alcohol project, developed by founder Dr John Forrest using viticultural science rather than additives or spinning-cone technology to reduce alcohol. Through targeted leaf and canopy management the vines are slowed in their sugar accumulation, so fruit can be harvested with ripe flavour but lower potential alcohol, retaining more natural grape sweetness and acidity. This Riesling draws on Marlborough fruit, including the stony Condor's Bend vineyard at Renwick where slow ripening builds intensity. The 2023 growing season yielded fruit picked to preserve the delicate poise of apple, lime and apricot needed to carry a wine of just 9% alcohol.

Vinification

Grapes were pressed and fermented cool in stainless steel, with the ferment stopped early to leave both the low 9% alcohol and a core of natural fruit sweetness. No concentration or de-alcoholising technology is used; the low alcohol comes from picking decisions and canopy work in the vineyard. The balance between apple and apricot sweetness and Riesling's bright, sherbet-like acidity keeps the wine light and easy-drinking. It was awarded a silver medal at the China Wine & Spirits Awards. Precise residual sugar and titratable acidity figures for the 2023 release are not published.
