Founded by Drs John and Brigid Forrest in 1988, Forrest Wines has consistently blurred the line between scientific innovation and fine wine production. Their acclaimed 'Doctors'' range was born from decades of research into natural alcohol reduction - an ambitious program that avoids dealcoholisation entirely in favour of precision viticulture. The 2023 Rosé is a field-blend of Pinot Noir and Arneis from estate vineyards in Marlborough's Wairau Valley, managed specifically to slow sugar accumulation through canopy manipulation and strategic irrigation. Grapes were picked early, cool-fermented in stainless steel, and bottled at just 9.5% ABV with 6.6g/L residual sugar, 7.2g/L total acidity and a pH of 3.19. The wine opens with lifted notes of wild strawberry, cherry skin and pink grapefruit, finishing bone-dry and brisk with a fine herbal edge. Awarded Silver at the 2024 China Wine & Spirits Awards, this is a benchmark in the emerging category of naturally low-alcohol wines - bright, balanced and technically uncompromising.

Vineyard Cultivation

This rosé sits within Forrest Wines' Doctors' range, the lower-alcohol project developed by founder Dr John Forrest that uses viticultural science, chiefly canopy and leaf management, to naturally curb sugar accumulation without additives or de-alcoholising equipment. Grown in Marlborough, the vines are managed so fruit ripens in flavour while carrying lower potential alcohol, retaining a little natural sweetness and fresh acidity. The 2025 season provided fruit picked to hold the delicate red-berry character and bright acid line needed for a rosé of just 9.5% alcohol. The range earned a silver medal at the 2024 China Wine & Spirits Awards.

Vinification

Made in a pale, dry-leaning rosé idiom, the fruit was pressed off its skins after brief contact to give a light hue and fresh red-berry flavour, then cool-fermented in stainless steel to protect aromatics. The ferment was stopped to leave the low 9.5% alcohol and 6.6 g/L of residual sugar, a touch of softness offset by crisp acidity. No concentration or spinning-cone technology is used; the reduced alcohol is achieved in the vineyard. The finished wine is light, red-fruited and easy-drinking.
