Vineyard Cultivation

Greystone is a certified-organic estate in the Omihi subregion of Waipara, North Canterbury, New Zealand. The Chardonnay is drawn from mature vines on the estate's limestone-influenced clay hillsides, farmed organically with a focus on living soils and site character. The winery is well known for pioneering vineyard fermentation, moving part of the fermentation out among the vines. The 2024 vintage was warmer and drier than the challenging 2023, giving North Canterbury growers a more settled ripening period; Greystone's sheltered Omihi slopes and careful canopy management yielded concentrated but balanced fruit with ripe white peach, nectarine and citrus, underpinned by the estate's characteristic freshness and saline minerality.

Vinification

Fruit is hand-harvested and whole-bunch pressed, then fermented with wild yeasts, including a portion fermented in the vineyard in the signature Greystone manner. The wine is barrel-fermented and aged on lees in French oak, part new, with lees stirring to develop texture and gentle toast, brioche and flinty complexity. Malolactic fermentation is handled to retain acidity and drive. Extended élevage on lees builds a creamy, nutty mid-palate while preserving stone-fruit and citrus definition, finishing with white-blossom lift and a saline mineral edge. Winemaking follows the estate's organic, low-intervention philosophy.
