Distillation

Terra Sancta Aperitivo Botanical is made on a base of Central Otago Pinot Gris wine, infused with a secret blend of 16 botanicals including kanuka, horopito, rosehip, elderberry, yarrow, thyme, sage, hawthorn, and artichoke — all foraged from the estate, the surrounding Bannockburn landscape, or the banks of the Kawarau River. The botanicals are dried and extracted at the winery before being combined with the base wine to produce an aperitivo with a naturally complex, bitter-sweet profile. No artificial colour is added — the warm amber tone is derived entirely from the botanical infusion. The finished aperitivo is bottled at low strength with a refreshing, Aperol-adjacent bitter orange and herbal character.

Provenance

Terra Sancta Estate is a Central Otago winery situated in Bannockburn — one of the driest, most sun-intense subregions of Central Otago in New Zealand's South Island. Terra Sancta is known for its Pinot Noir and aromatic white varieties grown in the schist soils and continental climate of the Cromwell Basin. The Aperitivo Botanical is described by Terra Sancta as New Zealand's first artisanal wine-based botanical aperitivo. The product grew from a lengthy process of foraging and trialling more than 30 medicinal and flavourful flowers, fruits, bark, leaves, roots, and seeds from the Bannockburn vineyards and the banks of the Kawarau River before a final recipe of 16 botanicals was settled in December 2019.

Central Otago

Central Otago is the southernmost wine growing region in the world, located at a latitude of 45 degrees south, on New Zealand’s south island. A spectacular landscape makes the region one of the most scenic wine regions if not in the world then certainly in New Zealand. Central to the region is the tourist destination of Queenstown, which is a great base to make wine trips from. Heavy mineral deposits in silt loams are typical for the soils in Central Otago, but is unlike any other region in New Zealand. The Otago region is the countries only ‘continental ’ wine growing region. Pinot Noir is the flagship red varietal, which is very well suited to the regions large diurnal shifts (a large diurnal shift means a big difference between low and high temperatures) and also the regions long, cool and dry autumn. The Pinot Noirs coming out of the Otago region are most often fragrant, lush Pinot Noirs with silky textures and true fruit intensity. Aromatic whites also thrive, in particular Riesling where anything from bone-dry to very sweet can be made. Gewurztraminer, Pinot Gris and lesser amounts of Chardonnay is also made to a very high quality. Central Otago is in Jancis Robinson’s top five New World wine producing regions.
