      Since 1812 Laurent-Perrier has put Chardonnay at the centre of its precise house style. Blanc de Blancs Brut Nature NV applies that focus to a zero-dosage expression, made entirely from Chardonnay sourced from selected Crus and vinified protectively in stainless steel to preserve definition. The base components are held for long lees aging to build texture and harmony in the absence of dosage, so balance is achieved by fruit maturity and time rather than added sugar. In the glass the bead is fine and persistent. The nose is lifted with lemon, white blossom and a clear chalk note. The palate is linear and saline, carrying crisp citrus and green apple along a firm mineral line, acidity bright and neatly integrated. The finish is clean, tapered and dry, making this a precise aperitif and a natural partner for oysters, sashimi and other delicately seasoned seafood, as well as crisp, lightly dressed vegetables for those seeking a bone-dry blanc de blancs.
