Bodegas Hidalgo, a Sanlucar institution since 1792, is world-renowned for the depth and authenticity of its traditional sherries. Triana Pedro Ximenez is a luxurious dessert wine crafted from sun-dried PX grapes sourced from select Andalusian vineyards. After careful harvesting and air-drying on esparto mats to concentrate sugars, the grapes are gently pressed and the must is slowly fermented before fortification. The resulting wine is aged for years in American oak butts through the solera system, developing immense concentration and complexity. Bottled at 15% abv, Triana PX pours viscous and ebony, with a nose of figs, dates, toffee, espresso and cocoa. The palate is decadently sweet yet balanced by acidity, delivering a mouth-coating texture and an endless finish of caramelised fruit, spice and roasted nuts.
