      Bodegas Hidalgo's Wellington Palo Cortado VORS 30 Years stands as one of the rarest treasures from this storied house, matured for over three decades in American oak solera butts and certified as "Very Old Rare Sherry." The estate's Atlantic proximity and unique bodega microclimate shape a sherry that marries the ethereal aromatics of Amontillado with the concentration of Oloroso. Grapes are sourced from the region's classic white albariza soils, and the long solera ageing builds immense depth. Bottled at 20% abv, this VORS Palo Cortado displays a nose of toasted walnut, old leather, dried orange, and polished mahogany. The palate is bone dry yet multidimensional, with persistent savoury notes, subtle caramel, and a long, harmonious finish. Best served lightly chilled, it is a wine for contemplation or to elevate fine dining, offering a sense of history and refinement that few sherries can match.
