Delinquente Wine Co, founded in 2013 in South Australia's Riverland, specialises in organic, small‑batch wines focused on Southern Italian varietals. The 2023 Jaybird Bianco Macerato is a unique four‑grape skin‑contact white - Fiano and Chardonnay were pressed off early, while Arinto, Vermentino and Malvasia fermented on skins for up to 14 days with spontaneous yeasts, then underwent malolactic fermentation before being blended and bottled unfiltered and unfined. This zero‑sulphur "orange wine" delivers intense aromas of canned lychee and orange blossom, a bright citrus palate of pink grapefruit and briny lemon, with savoury, herbaceous tannins and a crunchy, pithy texture that underscores its refreshing yet edgy natural‑wine character.
