      The Greywacke Archive Release Wild Sauvignon Blanc 2016 is a mature and deeply complex expression of Marlborough Sauvignon Blanc, showing how wild fermentation and bottle age transform the variety's character. Sourced from select vineyard parcels and fermented entirely with indigenous yeasts in old French oak barriques, the wine was aged on lees to build savoury depth and layered texture before bottling. Released after extended cellaring, this 2016 vintage now shows a richly developed aromatic profile of shortbread, quince, apricot and preserved lemon, intertwined with ginger, honeysuckle, toasted cashew, tarragon and subtle wood smoke. With time in bottle, tertiary nuances of lanolin, flint and roasted nut have emerged, adding further dimension. The palate is dry, broad and textural, yet finely balanced, with succulent citrus and stone fruit framed by bright acidity and mineral tension. Gentle oak influence and savoury spice carry through to a persistent, flinty finish. Bottled at 14.0% ABV, this wine demonstrates remarkable longevity and complexity, illustrating the pedigree of Greywacke's wild-fermented style and rewarding pairing with richer seafood dishes, roast poultry or aged cheeses.
