      The Greywacke Riesling 2023 is a lush yet finely poised expression that balances vibrant aromatics with texture and minerality. After pressing, the juice was fermented with indigenous yeasts in old French oak barriques, then transferred to stainless steel where fermentation was halted to retain about 20 g/L residual sugar. The blend was returned to neutral barrels for four months on lees before bottling in November to lend depth without overt oak character. The wine bottles at 12.9% ABV with a pH of 3.00 and a total acidity of 8.4 g/L. On the nose, the wine captivates with bright lemon and lime fruit, a delicate pastis note, and a lavender-like floral lift, all woven over a textured base of lees and mineral depth. The palate is silky, succulent and structured, with citrus, orchard fruit and saline tension melding into a finish that is both long and balanced. This is a Riesling with depth, charm and ageability, with potential to evolve complexity over the next decade.
