Over four days, subtle flavours and textures of plum sauce and pomegranate syrup, orange blossom and rosewater (bergamot?) emerge, while the spiciness amplifies, with pungent liquorice, sandalwood, allspice and meaty cracked black pepper. Impressive grip, freshness and precision."
