      Mon Cheval is a boutique Waipara estate in North Canterbury, dedicated exclusively to Pinot Noir from its close-planted 2.2-hectare vineyard. The Mon Petit range highlights youthful, fruit-forward styles, and the Carbonic 2020 captures a playful, lifted expression of the grape.

      In 2020, whole clusters were loaded into tanks for carbonic fermentation, a technique that emphasises aromatic vibrancy and soft tannin. After pressing, the wine rested briefly in stainless steel before being bottled early to preserve freshness and energy.

      The finished wine is bright and fragrant, with lifted strawberry and cherry fruit layered over subtle earthy nuances. Light-bodied and juicy, it shows supple texture and lively acidity, making it an immediate and refreshing take on Waipara Pinot Noir.
