Drawing on his family's Normandy traditions and Italian technique, Julien crafts the No8 Limoncello in Dunedin using fresh New Zealand lemons. Zest is hand peeled and macerated in neutral spirit using a slow cold infusion in copper stills, then gently sweetened and bottled at 20 percent ABV. The result is bright yellow in colour with aromas of fresh lemon oil, candied peel and citrus blossom. The palate balances vibrant sweetness with lively acidity, delivering clarity and poise through a smooth finish. Served chilled, it reflects both Mediterranean craftsmanship and the distillerys focus on purity and local provenance.
