      Organised Chaos is a Hawke's Bay producer crafting small-batch wines with energy and character. The Pinot Noir Pétillant Naturel is their naturally sparkling expression, made with minimal intervention to capture freshness and vibrancy.

      In 2023, Pinot Noir was carbonically macerated before being whole-bunch pressed to stainless steel. Fermentation started in tank and was finished in bottle, trapping natural effervescence and leaving a touch of residual sweetness.

      The finished wine is light rose in colour with aromas of strawberry and cherry. On the palate it is bright and juicy, lightly fizzy with refreshing acidity, offering a playful and easy-drinking take on Pinot Noir.
