The Palliser Om Santi Chardonnay 2023 is a flagship single-vineyard release that captures the precision, depth and longevity of Martinborough Chardonnay at a higher echelon. Sourced exclusively from the Om Santi Vineyard, the fruit was hand-picked at optimal ripeness, whole-bunch pressed and fermented with indigenous yeasts in French oak barriques, around 17% new. Extended maturation on fine lees with gentle stirring has built texture, savoury depth and refined structure without compromising purity. Bottled under screwcap, the wine presents a complex, expressive bouquet of white peach, lemon curd and citrus zest layered with struck flint, roasted almond, lees-derived spice and subtle smoky oak. The palate is finely etched yet powerful, with crystalline stone fruit and citrus at its core, enveloped by creamy texture, saline minerality and vibrant acidity. Poised and elegant, it shows both immediate appeal and significant cellaring potential, capable of evolving greater nuance and harmony through to the early 2030s. This is a sophisticated, site-expressive Chardonnay that pairs beautifully with roast poultry, lobster or creamy mushroom dishes and speaks to Palliser’s commitment to terroir-driven excellence.
