The Palliser Pinot Noir 2023 is a refined and site-expressive Martinborough wine that unites vibrant fruit purity with savoury depth and structural finesse. Estate-grown Pinot Noir was hand-harvested, destemmed with a portion of whole bunches retained, and fermented in open-top vessels with gentle extraction. The wine was matured in French oak barriques, a proportion of which were new, to build texture and complexity while preserving fruit focus. Bottled at around 14.0% ABV, it opens with an aromatic profile of red cherry, wild strawberry and baked plum layered with cinnamon, nutmeg, wood spice and subtle barrel smoke. Earthy undertones and mineral hints add further nuance. The palate is dry and finely structured, delivering a core of red berry fruit framed by firm yet silky tannins and vibrant acidity. Spicy, savoury notes build complexity through a long, balanced finish.
