Sourced from organically grown fruit in Gibbston and neighbouring sites, the grapes are harvested early to retain bright acidity and freshness. Gentle pressing and minimal skin contact yield a pale, salmon-pink colour and pure red berry aromatics. Fermented cool in stainless steel and bottled at 13% abv under Stelvin, the wine opens with lifted notes of wild strawberry, watermelon, and rose petal. The palate is crisp and dry, with flavours of red cherry, citrus, and a mouth-watering saline finish, making it an ideal companion for summer fare - think salads, grilled prawns, or antipasti.
