Schubert Wines, founded in Martinborough by German winemakers Kai Schubert and Marion Deimling, is celebrated for its organic vineyards and European-inspired approach to New Zealand winemaking. This Pétillant Naturel, or Pet-Nat, is their natural sparkling expression of Sauvignon Blanc, crafted with minimal intervention to highlight purity and energy.
For the 2022 vintage, Sauvignon Blanc juice was fermented in stainless steel and bottled with residual sugar to complete fermentation in bottle. Left unfined and unfiltered, the wine retains its natural character and lightly cloudy appearance, while the traditional méthode ancestrale technique yields a gentle, persistent sparkle.
The finished wine is vibrant and refreshing, with passionfruit and lime lifted by subtle bread-dough notes from the natural lees. Bright acidity and a dry finish give precision and length, making this Pet-Nat an energetic and unconventional take on New Zealand Sauvignon Blanc
