Marlborough’s Seresin, biodynamic since 2000, experiments with amphora fermentation for this limited-release white. Estate fruit is hand-picked, wild-fermented and left on skins in clay amphorae for extended maceration. The result is amber, textured and dry, with stone fruit, spice and savoury depth.
